Made using apples from Rosette’s garden.

Apparently a Norwegian was invited for dinner and thought he got lucky.

All that he got were these puddings which are now infamous.

PRINCESS PEA SALAD

Peas are a perfect way to add 1 of your 5 a day to a meal or salad as they only take 2 minutes to cook from frozen, are sweet and delicious.

They add a ‘pop’ to my salad and with 35,000 hectares grown in the UK per year that’s 160,000 tonnes of frozen peas, the UK is 90% self sufficient in peas and with a low carbon footprint they are cheerfully cheap too.

They are also a great way to pack in some protein and with vitamins A, B, C and E can reduce inflammation and the symptoms of chronic health conditions such as diabetes, heart disease and arthritis.

CREAMY CARROT SOUP

Ingredients: olive oil, 1/2 onion, 500g carrots, 5 cloves crushed garlic, 1/2 teaspoon fresh ginger, 1/2 vegetable stock cube, 1/2 teaspoon ground black pepper, himalayan rock salt, 1 Bay leaf. Serves 3, Total Cost: 50p

CURRIED (!) TORTILLA

I like to spicen this traditional Spanish dish with some Indian herbs and spices, tumeric (good for strong bones), cumin (full of iron), crushed chillies, black pepper and paprika (with a sweet flavour) works really well with the potatoes and onions in this traditional Spanish dish…

I also like to add sweet potatoes and peas to my tortilla as well as plain potatoes and onions, as I find their sweet taste pleasing for this savoury dish and they are full of fibre.

It’s also, like all of my recipes now, 100% vegetarian and lactose free, if not Vegan.

COOKING CURRY FROM SCRATCH

20 MINUTE VEGAN CHICKPEA CURRY

My BASIC curry spice mix: 1 teaspoon chilli, 1 teaspoon tumeric, 1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon cinnamon, 1 teaspoon salt, 1 onion, 5 cloves of garlic. Total Cost of Ingredients (enough to make endless curries): Less than £8.85 Cheaper than any curry paste.

MOIST APPLE, RAISIN & WALNUT CAKE

Ingredients:
225g/28 tablespoons self raising flour, 1/2 teaspoon salt, 1/2 teaspoon bicarbonate of soda, 5.5 tablespoons oil, 225g/18 tablespoons sugar, 2-4 cooking apples, 50g raisins, 50g walnuts, 1 teaspoon vanilla essence, 2 eggs beaten.

100% Vegetarian & lactose free

APPLE, GINGER & BANANA CRUMBLE

Ingredients: 675g prepared fruit, 40-100g sugar, 4 tablespoons water, crumble topping: 175g self raising flour, 40g demerara brown sugar, 100g butter or alternatively vegan margarine.

MUM’S GENIUS MICROWAVE DESSERT APPLE

I always pop my potatoes for baking in the microwave.

I never thought of doing the same with an apple, until my mum called me and said how delicious it was (!)

Pop the apple in the microwave, high heat, for about 3 minutes.

Add some cinnamon spice, to taste.

BANANA FRITTERS

Mash your bananas to form a watery paste.

Add some flour and mix until it forms a thick cake like mixture.

Start frying (!)

Cumin is a powerful source of iron, few foods have such a high iron content as cumin.

It has a warming taste and even a pinch in your soup or salad is highly beneficial.

HOME BAKED CROISSANTS

These croissants are exciting to watch rise and take shape in the oven (!)

Frozen for you to bake at home, these are delightful little treats to keep in your freezer for an emergency lazy morning when you want that hot pastry smell, but without the butter sticking to your fingers.

Cheap and much more cheerful alternative to the pricey individually priced pick and mix pastries you sometimes find in the supermarket.

They only take about 20 minutes to bake.

Delicious and fresh too (!)

Total Cost: £2 for 6 Croissants (Best deal in town).
